Dal Fry



Below includes a step by step procedure on how to make a dish really popular in North India called Dal Fry.

Ingredients Required

  1. 1 Cup of Pigeon Peas Dal
  2. 1 Cup of Gram Peas Dal
  3. 1 Small cup of Ghee
  4. Cumin Seeds
  5. 1 Cinnamon Stick (Daalcheene)
  6. 2-3 Cloves (Laung)
  7. 1 Bowl of Onions finely chopped
  8. 1 Bowl of Tomatoes
  9. 2 Green Chillies
  10. Asafoetida (Heeng)
  11. Garlic
  12. Coriander Leaves (Dhaniya)
  13.  Seasoning Ingredients
  14. Water

Procedure

  1. Mix the Pigeon Peas Dal and Gram Peas Dal together in little amount of water and pressure cook it for about 3-4 whistles.
  2. Lightly churn the Dal mixture till it looks like this.
  3. Add 3/4 of the ghee in a pan and let it heat. Add Cumin seeds, Cinnamon and Cloves to it.
  4. Add Onions and cook until they turn Golden. Now add Green Chillies and Tomatoes to the mixture.
  5. Cook until the Tomatoes become soft.(You can add salt to the mixture to speed up the cooking of tomatoes)
  6. Add about 2 table spoons of Turmeric Powder and 1 table spoon of Kashmiri red chilli powder and mix well.
  7. Now add the earlier cooked Dal mixture to the above mixture slowly and mix well.
  8. Add some water to the Dal as it tends to thicken a little.
  9. Mix the Dal well and cook it on medium flame till it begins to boil.

For The Tadka

  1. In a small bowl heat the remaining ghee and cook it along with some Heeng, Garlic and a red chilli.
  2. Add on top of the Dal for the tadka.
  3. Garnish it with some Coriander leaves at the top.
